pea soup

i like simple and fast recipes so here’s one for pea soup:

3lbs peas (frozen or fresh)
1 veggie bouillon cube
3 med to large garlic cloves
salt

add salt, garlic cloves, and bouillon cube to 2 cups water and bring to boil. add peas and allow the water to return to a boil. let cook for another 1-2 minutes at a boil, then remove the pot from the burner. transfer to a blender and puree (i use all of the broth water, but if you like a slightly thicker soup, add less broth water). pour into a bowl and eat… yum!

makes lots of servings… freeze some.

additions: 3oz of ham or 2 poached eggs (i added the eggs and it was pretty good).
